Ingredients:
- 3 pounds red potatoes, washed and cut into 1-inch chunks
- 5 garlic cloves, peeled
- 1 cup heavy cream
- ½ cup salted butter
- ½ cup Parmesan cheese, shredded
- Kosher salt, to taste
- Black pepper, to taste

Step One:
Boil potatoes
Place a large pot of heavily salted water over high heat. Add potatoes and garlic cloves, and bring to a rolling boil. Boil until potatoes are fork-tender, about 15–20 minutes. Drain potatoes and garlic. Set aside.

Heat cream and butter
In a small saucepan, heat heavy cream and butter until butter is fully melted into the cream. Pour over potatoes and mash until smooth.

Stir in Parmesan cheese, taste and season with kosher salt and black pepper.
